What's Cooking on 1060: South Philly gets a new butcher shop

PHILADELPHIA (KYW Newsradio) -- A new authentic butcher shop has officially opened on East Passyunk Avenue and it's owned and operated by a young woman.

"It's a thrill to hear people say, 'my butcher' when they talk about us."

Heather Thomason is passionate about butchery -- and she loves her customers.

"Because I think that there are a lot of people in South Philly who appreciate what a true craft butcher shop is," Thomason said, "and there aren't a lot of them around anymore."

Primal Supply Meats at 1538 East Passyunk Avenue recently opened, but before that, they were a remote business working out of a refrigerated warehouse. Thomason says they still use their warehouse to receive animals from slaughter.

"We buy whole animals from local farmers," she said. "It's kind of a commitment that we make, it supports the framers a little bit more strongly and it's nice for us to really do our work and get all the cuts out of everything."

But it's hard work.

"It's a highly perishable product," Thomason explained. "It's expensive, so I bring it in here and then we need people to walk in here every day and buy every part."

Which is why Thomason says relationships are so important to her business. 

"There are some chefs that we can call," she said, "and say, 'Hey chef, nobody's buying this right now, is there room for this on your menu?'"

Speaking of what's on the menu, Thomason points out it's grilling season. So what does she recommend?

"Now that it's not braising and stewing season, we'll take short ribs and cross-cut them real thin Korean-style," she said, "so you could grill them instead and that's a really fun thing to introduce people to."
